The short answer
Inset sinks go in after the benchtop; undermount sinks are set with the stonemason when the benchtop is installed. Either way, the waste height, trap, dishwasher branch, taps and isolating valves are worked out first. A straight swap is usually one visit. Moving a sink, for example to an island, means new drainage and more planning.
